Strawberry Salad

It is the start of strawberry season, which means I get to start making my all time favorite salad. This is one of those recipes I can remember my mom making at least a few days a week.  Don't fear the red onion-- you will thinly slice it, and it adds a welcome sweetness to the greens.

Salad Ingredients: 12 or more sliced strawberries, romaine and iceberg lettuce blend, 1/2 red onion very thinly sliced. Dressing: wisk together 1/2 cup mayo, 2 tablespoons white wine vinegar, 1/3 cup sugar, 1/4 cup milk, and 2 tablespoons poppy seeds.  Pour over salad and toss.



Strawberry Shortcake

If you've ever had dinner at my house, you've had this dessert.  Actually, if you've had dinner at my mom's house, you've had this dessert.  

For 6 servings- Ingredients:  Start with making Jiffy Buttermilk Biscuits according to package directions. Slice 2 pints of strawberries and place in a bowl, sprinkle a tablespoon of sugar over the strawberries and toss.  Place in the refrigerator for a least an hour to let the magic happen.  Whip a pint of heavy whipping cream with a tablespoon of sugar (or more) and a teaspoon of vanilla.    Assemble dessert by slicing biscuit in half.  Putting 1/12 strawberries on bottom slice, put on top of biscuit, put another 1/12 of strawberries on top, and top with a dollop of whipped cream.

Strawberry Cosmopolitan

In a glass, muddle 2 hulled strawberries with a squeeze of lemon.  To the strawberries, add 1 ounce of Triple Sec or Cointreau, and 2 ounces of vodka.  Fill glass with ice and shake.  Strain drink into a martini glass.
