I took a last minute spring break trip to visit my mom in Massachusetts. On the day I arrived it snowed 6 inches and the temperature did not reach above freezing. During the day we shopped, and in the evening sipped wine by the fire. Of course, we also ate. Take a look below for some recipes from my mom and photos from one of my favorite hometown restaurants.
Ingredients: 1/2 pound haddock per person, panko, butter, garlic powder, salt and pepper.
Directions: Preheat oven to 350 degrees. Dry fish with paper towels. Salt and pepper fish and sprinkle enough panko to lightly cover. Shake a teaspoon of garlic powder over fish and dot with 1-2 tablespoons of butter. Bake until fish flakes, 20-25 minutes.
