Your New Favorite Pasta Dish

This creation was a happy accident.  One that I plan to make again and again.  The hubby had requested pasta for dinner, something a little creamy with sausage.  I love a request...so to the kitchen I went!

Serves 6+
Ingredients:  olive oil, pint of cherry or grape tomatoes, 1 pound italian sausage, 2 Tbs. tomato paste, as much fresh mozzarella as you can stand!, 1 pound pasta (I used cavatappi but penne or ziti would be great), large bunch of basil, 1/2 cup vodka, 1/2 cup half & half, salt & pepper

 1. Break up and brown sausage in 1 Tbs of olive oil over medium-high heat.

 3. Drain sausage on paper towels.

 4. In same pan, add 1/2 Tbs. of olive oil, tomatoes, tomato paste, pinches of salt and pepper and sauté over medium heat for 2-3 minutes.

 5.  Add vodka carefully (especially if you cook over open flame).  Let the sauce simmer for 5 minutes over medium heat.  Turn heat to low and add the half & half.  Simmer for 3-4 minutes until the sauce thickens slightly.

 6. While vodka sauce cooks, begin cooking pasta according to package directions.

 7. Julienne basil by rolling leaves into a cigar-like shape and then thinly slice.

 8. Cube the mozzarella and add the basil to a bowl.

 9. Toss the basil, mozzarella, cooked sausage, pasta, and sauce together.
