This recipe was inspired by another Saturday morning cooking show. One of the hosts visited a restaurant that served a chilled and unusual cauliflower salad. This is my recreation of that dish!
Ingredients: Head of cauliflower, 1/3 cup golden raisins, 1/2-full can chickpeas (depending how much you like them), 1/4 cup each of chopped mint and cilantro, 1/2 cup mayo, 2 tsp. curry powder, 1/3 of juiced lemon, olive oil, salt and pepper.
