Secret Family Recipes...Shhh

My husband and I just returned from a two week long road trip up the coast of California and we ate a lot of great food. My favorite meals were the ones cooked by my family in their kitchens.  I have been trying to recreate some of those dishes: 

Sarah's Lamb Kabobs

My cousin Sarah will be the first to tell you that this is her go to dinner when she has people over...yes, they are that good.  

Mix all ingredients in bowl.  Using your hands, pack mixture around kabobs.  Place kabobs in a single in a baking dish.  Bake at 350 degrees for 30 minutes.

Ingredients: 
1.5 pounds ground lamb
3 tbsp chopped mint
3 tbsp chopped parley
zest from 1 lemon
1 egg
2 cloves garlic, minced
 

Beet Tart

The beet tart was Sarah's inspired take on an Ottolenghi recipe.  The recipe called for sweet potatoes but she used beets.  I still haven't tried it with the potatoes because the beets are SO good!

 Ingredients: 2 large roasted beets, defrosted puff pastry, 6 tbsp sour cream, 1 tbsp minced thyme, 1 tbsp minced parsley, roasted + salted pumpkin or sunflower seeds, 5 tbsp goat cheese, salt and pepper.

 In their own, tight, tinfoil packets, roast beets with a drizzle of olive oil, and a sprikle of salt and pepper.  Roast for 1 hour at 400 degrees.  When cool enough to handle, peel and slice thin.

 Dollop and spread sour cream leaving a boarder.  Sprinkle with thyme, salt, and pepper.

 Spread goat cheese over top and bake at 400 degrees for 25 minutes or until very golden brown.

Uncle Law's Steak.  You will never cook yours the same again.

I have made these steaks more than a few times since we have returned from our trip.  They are  seasoned perfectly, and the meat is so tender it cuts like butter.

 Sprinkle both sides of the steak with a hefty amount of kosher salt.  I probably used a 1/4 cup for two steaks.  Allow steaks to sit on your counter for at least an hour, up to two.

 Rinse steaks, and pat completely dry with paper towels.  This is it!  Your steaks are ready to be grilled.  Cook until golden brown and slightly charred, 4 minutes. Turn the steaks over and continue to grill 3 to 5 minutes for medium-rare
